What started as a derelict patch of land in the heart of Wollongong, has turned into our ultimate passion project.  The purpose of the project is built around creating a circular food system for our hotel, as well as producing some fresh native botanicals to be used in our craft distillery.  We compost our pub's green waste and turn it into fuel for our thriving gardens.
