The Chef Specials

 

Our Head Chef, Brendan Blackmore, brings his passion for food, flair for fun in the kitchen and rich experience in fine dining venues to The Illawarra Hotel. 

With an impressive list of restaurants under his belt, including The Imperial at Clifton, Catalina Country Club and Stingrays Ocean and Grill Batemans Bay, to name but a few, Brendan has a culinary history to boast about.

His time in the kitchen has seen him work alongside many big name Chefs and he has had the pleasure of cooking food for some very cool people! Chefs who have represented Australia and worked all over France, cooking for Ahn Do and Daniel Johns and filming a segment on Alex Volkanovski's 'Cooking With Volk' Show are just a few highlights that showcase his exciting career.

Brendan loves delicious, but simple food, which he says is inspired by Daniel Dobra. Simply matching flavours together and keeping it clean and minimal to draw out the distinct flavours of each dish is a signature of his cooking expertise. With a passion for cooking seafood, a love of Middle Eastern Cuisine and fondness for Contemporary Australian dishes, plus his use of seasonal and fresh produce, his weekly Chef Specials are a way for him to unleash his creativity in the kitchen.
